Soup in a Pumpkin

Last month I found a recipe in the Food Network magazine for a butternut squash soup that you served in a mini pumpkin. I have been obsessed with making it ever since and the other night I finally made it with Thomas and Christine as my guinea pigs! 

I can't find the recipe anywhere now of course, but it's pretty much your basic butternut squash soup just served in a festive little pumpkin. 

I started out with 3 pumpkin and Christine and I carved them and pulled out all the gunk....

Then you put a little bit of salt and a little bit of sugar in each one, put the lid back on, and pop it in the oven to roast on 400 for about 30 minutes. 
While that was going on I made the soup and the homemade croutons to go on top of it. 

So the soup was basically a puree of butternut with some spices, water and cream. And then you can top it with croutons, paprika, chili powder, prosciutto, fried onions and they didn't put cheese, but I would say with cheddar cheese it would be great. 
The soup was good, but the bowls were definitely what made it fun and so fallish! 
Can't wait for more Fall things this weekend!!! Pumpkin carving and Halloween marathon here I come.
