Oh Happy Day
My wonderful Mother just sent me my annual Halloween cookies from the insanely good Apple Annie's Bakery in Wilmington.

It's official... Winter is here
It's SNOWING!!!!!!!!!!
It just started snowing about 4 minutes ago. First snow of the season! It finally made it's way to Boulder and within in 5 minutes of tiny flurries the mountains in front of my office are now like white out. It won't stick at all, but this is the start and soon it will look like this.....
Colorado weather is so weird. It's not even snowing at our house 3 miles down the road...

Soup in a Pumpkin
Last month I found a recipe in the Food Network magazine for a butternut squash soup that you served in a mini pumpkin. I have been obsessed with making it ever since and the other night I finally made it with Thomas and Christine as my guinea pigs!
I can't find the recipe anywhere now of course, but it's pretty much your basic butternut squash soup just served in a festive little pumpkin.
I started out with 3 pumpkin and Christine and I carved them and pulled out all the gunk....
Then you put a little bit of salt and a little bit of sugar in each one, put the lid back on, and pop it in the oven to roast on 400 for about 30 minutes.
While that was going on I made the soup and the homemade croutons to go on top of it.
So the soup was basically a puree of butternut with some spices, water and cream. And then you can top it with croutons, paprika, chili powder, prosciutto, fried onions and they didn't put cheese, but I would say with cheddar cheese it would be great.
The soup was good, but the bowls were definitely what made it fun and so fallish!
Can't wait for more Fall things this weekend!!! Pumpkin carving and Halloween marathon here I come.

Hello Fall... I love you.
The past couple of weeks in Boulder have been amazing fall days with sunny skies and gorgeous leaves changing every where. I literally feel like Meg Ryan in You've Got Mail where she's like all I want is a bouquet of freshly sharpened pencils for back to school. I love Fall.
So this past weekend Thomas and I embraced Fall and did some appropriate October activities.
On Saturday, we went down to the farmer's market for lunch and picked up some apples and butternut squash.

Then that night we headed off to a CU football game. I have been literally craving football so we decided to go last minute and found some also seats right on the 40 yard line, 25 rows up. It was great.... but made me miss good ole NC State games way way too much!

The best part of the whole game was that at half time. They had the marching band, cheerleaders, flag girls.... and INTERPRETIVE DANCERS.... yes. Only in Boulder. All dressed in white, leaping around. I tried to get pics of this insanely hilarious sighting.
On Sunday we headed up to Estes Park for some lunch, a hike in Rocky Mountain National Park and then we did a history/ghost tour at the Stanley Hotel (where the Shinning was supposed to take place). The tour was mostly history, but it was alright because it was actually cool history and awesome to see all the old architecture and know the stories behind everything.

Sick.
I think I keep my office relatively clean and organized, but apparently I let this one slip through the cracks...
I found this yesterday afternoon on my side desk where I normally toss my lunch for the day or any snacks.
This is gross.

Florida Wedding
So two weekends ago ( Yes, I am very behind on blogging) Thomas and I went to Ponte Verda, Florida for one of his family's best friend's wedding. It was gorgeous!! This is where the wedding was and where we were staying

It was so nice, which is not what I was first expecting when thinking of Florida, but this was actually like old Florida beach club so it was very cool. They had tennis, golf, the beach and it was this sweet little town.
It was also the first time I have ever really hung out with Thomas' family. And since he was in the wedding, I spent a lot of time with the fam. So here's the "Meet the Parents" moment of the weekend.
On Saturday we were all on the beach swimming and sunning when a little game of touch football was decided on. See his family is all very athletic and apparently plays football every holiday they are together.
So we split up in to teams of four. Thomas, me, his brother and his bro's wife versus Thomas' Mom, Dad, sister and sister's husband. The field was drawn in the sand with in zones and we were about to set up our plays (yes, serious game here).
This is when Charles, Thomas' brother in law, looks at me and says "Robin, we need to see if you can catch." He was on the opposing team and wanted to see if I was good. So Charles (who apparently used to play football) throws the ball from about 30-40 feet away and it goes up high and falls back down where I am with arms open ready to catch it.
Well due to the fact that I am tired from waking up at 3:45 am the previous day to get there, hungover and well just not athletic. The ball falls and hits me smack in the head.
Yes, knocked off my sunglasses and left me grabbing my face. Luckily, no blood or really bad bruising just TOTAL EMBARRASSMENT. They all ran over of course and I was so embarrassed I just wanted everyone to go back to normal!
Needless to say it is now quiet funny, but yes I was totally pushing back tears at the time.

I'm Back!
After an insane work week and then a trip this past weekend, things are finally getting back to normal around here.
AND I am going to officially mark today as the first day of Fall/Winter in Boulder. This is because:
1) I woke up to rain this morning and had zero desire to get out of bed.
2) I turned on our heat for the first real time last night..... and immediately found out our windows have very VERY bad insulation.
3) Today is the first real day I have worn boots and a warm jacket to work.
4) I got in my car this morning and it said it was 45 degrees outside!
5) This is the biggest reason of all! I was driving to work and all of the sudden a car passed me with SNOW on the windows. SNOWWWWWWWWWWWWWWWWW (sigh). Yep, they were likely just coming down from the mountains like 15 minutes away. That makes it official.
I even snapped a photo of this sighting (while my mouth was hanging open and my rainy day good mood was going).
It's hard to see through the rain, but there is white snow on that back windshield.
However, once I got to work I went to the bakery and got a slice of pumpkin spice bread and everything was magically better! It was like Thanksgiving in my mouth. Loved it!
The reason all of this information was so hard to swallow is because this is where I was this past weekend.....

For Jessica Lynn...
Apparently, our dear friend Jessie is lost without my titillating blog posts everyday.
I apologize Jess. I have been at a work conference for nonprofits in Colorado for 2 days now. (Christine I got 2 new water bottles... I know you're excited to add to my collection over about 15 now?)
I am pumped about 3 things today.
1) The conference is in Denver and right next to the Forever 21 that is downtown. Normally this would not excite me that much. Except this is the nicest Forever 21 in the world. It is so organized. No like overflowing and the people are actually nice. So yesterday I went and proceeded to get just a few things....
- 2 new tunic tanks
- 1 military green shirt
- 1 blueish button down
- 1 black bomber jackets
- 1 taupe purse that will fall apart, but I will like for a week.
Probably a little excessive, but fun. Oh well!
2) I am about to eat Mellow Mushroom for lunch. This is a luxury as they do not exist in the land of Colorado and this one has just opened! Yay..... memories of margs and pizza on Thursdays on Glenwood. I love college.
3) My dresses from my previous post are here!!!!! And the decision was..... BOTH!! IT was like $30 off if you ordered over a certain amount. I'll return one and save a little. Can't wait to get home in a few hours and see which one I will be wearing.
4) We will be tailgating for the CU vs. UGA game tomorrow!!!! I am missing football horribly right now with the evil facebook showing me what I am missing every weekend in the good ole south.
